Have been in the restaurant  business over 30 years. Lots of grilling meats/seafood over charcoal. Limited smoking and sausage making. Looking to learn more smoking and sausage making ability.
 
Welcome , bro. I don't know sausage making , but I'm always glad to learn about anything cooking related. You will find tons of expertise here in all areas. Good luck , man. :grilling_smilie:
