Hey cool forum, I never thought of even looking for a forum on this subject, great info. on here.

I live in N. Idaho and really have been trying to learn some better smoking/BBQ techniques lately. I have a gas grill but mostly use charcoal and wood and just use the gas for temp control if needed. I'm thinking about getting a little smoker though as it's really hard to get things right with my makeshift setup. I had been happily going along BBQ-ing steaks, chops, chicken, etc. Then met the challenge of doing ribs, we ate some poorly cooked ones for a while, but still haven't gotten them how I really want them to be. I hope to learn how to make some really good ones on here. Looking forward to it!

thanks Ken, I'm getting dried out eyeballs right now reading everything :)

If I can make some great beef ribs, I'll be really happy, I got going on this when I figured out how to make something simple, a smoked tri-tip roast, it's sooooo good but it's easy to do. Now I need a challenge heh heh

We have a local restraunt here called Long Horn, they specialize in smoked beef ribs, their so good I'd choose em over prime rib any day, I know there has to be a way I can at least get close to their level.... I hope :)

Welcome to the forums! You'll be out smoking Long Horn in no time!
As far as the thread display mode...
Go to the user cp in the upper left of this page and go to edit options in the settings menu on the left. scroll down until you see "thread display mode"
Drop that down and choose "Linear - oldest first"

Hello Ron, welcome to the SMF. Sounds like you're up in the panhandle region, I love that area. Checkout Jeff's 5-Day Ecourse, great reading/review. Don't give up on those ribs.

Welcome to SMF , You undoubtedly will get better with the awesome help available on here. I know I did. Where in N Idaho are you , I pass thru there several times a year on my way to Post Falls and Spokane. I think there is a restaurant in Post Falls called the Longhorn or a name very similar to that. We went there but it was closed on mondays for some odd reason.
BBQ places should not be allowed to close IMO.
