OK - bought a fresh turkey breast from local store as it was "day of meat" i.e. 50% off. This happened during my work lunch and left in the work frig today. Called the boss tonight - I'm going to get the breast tonight from work (7:00pm) and will take the later 1/2 day off tomorrow to smoke. Now - need a game plan between tonight and while I'm at work until noon (EST). This turkey breast says 100% organic, fresh, etc. I'm thinking of a quick 4 hour brine tonight and smoking it on the beer bottom stand tomorrow. Naturally coated the bird in seasonings and oil. Any other basic ideas for tonight or tomorrow? Never done a 'fresh' breast or bird. Worried about the 'dryness'... Your thoughts?
