My first time making this. Granted, I did alot of research before I began this process and it definitely helped. The players were 9 lbs of well trimmed Picnic, TSM Italian sweet seasoning and stuffed into 29-32 hog casings. Here we go. Ready to go. Coming along nicely. All finished. After a short rest in the refrig, vac sealed for another day. All in all, it was a success. Next batch will be HOT!
