I have 2 fresh hams from a hog i killed will they be good for making sausage if i add fat to them?

Fry up a little and taste it ... not rank it will be excellent.
Don't use any of the fat. Get good fat and blend in 15%-20% with it in the grind.
You can also do a brine cure with a very light smoke process to make some decent ham out of it.
