Freezing twice

    Generally it's important that thawed foods should not be refrozen for fear of introducing bacteria. Without thinking I put 8 pounds of ground sausage in the freezer with plans to stuff them in to sausage later. Realizing that once I make sausage links I should not re-freeze. Is this correct or would it be safe to refreeze the links? If I smoke the links can I refreeze the sausage?

    I don't recommend it being ground meat but you can, but your process cannot go over 40 degrees and you will need to have all your equipment sanitized before use. Petty much you would have to process in a walk in refrigerator that has been thoroughly cleaned.

    I would stuff, smoke/cook to 160 IT, then refreeze the sausage and thaw/reheat and serve later
     

    Did you grind/season the meat or did you buy it already ground/seasoned

    Nope. Dont know where its been or how its been handled. Cook/smoke then refreeze
