Good afternoon everybody!

It's been a while since I've posted anything I've smoked...I've been busy with work and getting set-up for a side project (more to follow soon!)

So we head out camping with a large group of friends for camping over memorial day weekend...nothing new, I wanted to make sure Frank Jr. was up to the task of smoking vast quantities of meats and what not as I am planning on loading him up in the truck for the extended weekend.



I decided to break Frank Jr. in with smoke some almonds (6lbs) yesterday...used the 6" AMNTS with some hickory, smoked for 2 hours at 230*F. They are as good as TEFS. SIDE NOTE: I decided to add a little 3,000RPM 110v fan with a 2.5" fan blade to Frank Jr. to circulate air/smoke/heat. It works exceedingly well!!!

Today I wanted to smoke some jerky...Sam's Club had a Round Roast on clearance...perfect for jerky. $15, 4.5 hours on maple smoke and at 140*F for 2 hours and finished at 170*F for the remaining 2.5 hours...I have jerky! Frank Jr. holds temps excellently and throughout the smoke I only had to adjust when I bumped the heat to the 170*.


Frank Jr. works so easily, I'm pretty sure he'll be my go-to-guy for most smokes as TEFS will be busy on production work (again, more to follow!)

I am day 3 into the camping trip...I've smoked a pork loin and 2 deer loins that were just phenomenal!

I put an 8lb brisket on last night to smoke all night and added a 5lb pork shoulder this morning! Used my 18" AMNTS with pitmasters blend. I was able to sleep all night and not worry about the brisket and it was at 171*F when I woke up and just looked gorgeous!

That looks great. A pellet smoker is the wat to go.
