Fourth of July smoke (with third of July prep): Two Fatties and Mac and Cheese

So, for the fourth of July I've planned three dishes. To make my 4th enjoyable, I'll do almost all of the prep tomorrow so I can just smoke on Thursday. I'll post pictures as I go and I'll let you know if anything I make is worth trying to recreate.  Also, everything I make is pork free and there will be no dairy products mixed in with the meat (so you're not wondering why...).  

The Menu:

Thanksgiving Turkey Fattie with cranberry sauce, apple walnut sage stuffing, and asparagus. 

Mexican Turkey Fattie with homemade refried beans, black olives, sauteed peppers and onions, and mexican rice. 

Smoked Mac and Cheese with cheddar and mozzarella.

Update #1 - turkey meat

Here are the ingredients and the mixed turkey and spices.  For both, I saved some dry rub to sprinkle on the fattie tomorrow before I begin the smoke to help with a little bit of crust if possible.  I'll post actual recipes tomorrow once I see if anything's actually worth reproducing.  

For the thanksgiving turkey: 


The fresh herbs, onion, lemon zest, and olive oil processed into a paste


Ground turkey mixed with herb paste and dry rub


Mexican Turkey:

Using a recipe for turkey chorizo. Substituting lemon zest and parsley for tsp coriander.


Mix with Apple Cider Vinegar


Mixed with turkey


Now to go make the refried beans, stuffing (with homemade challah bread), and cranberry sauce....stay tuned! Thanks for your comments :)  Knowing you're all reading is half the fun!

Update 2 - the rolling

After spending my whole day cooking, I realize that I need to do fatties like normal people next time and use leftovers or easy stuff....though I suppose if I just mde one, it wouldn't have been as bad.  I know this is a crap ton of pictures....feel free to scroll quickly!
