For Those who Didn't Smoke Today

    Thought I'd do up a little feed for my wife and I! St Louis spares with the trimmings.







    Decided to throw in a fatty (my homemade venison hot Italian sausage).

    very nice , rib's look tasty and a venison fatty woohoo !!! i only got to smoke for a lil over an hour today.....so yeah i am jealous , but good job
    and nice plating too

    bassman........i got bout 50 lbs of venison in the freezer........care to share you hot italian sausage recipe?

    Thanks for the compliments, guys! Needless to say, I'm not very hungry right now [​IMG].

    Walking Dude, I started off by grinding up enough pork butt (shoulder) to make about a 50/50 mix. I only semi followed a recipe (Rytek Kutas's book). Never seems to be quite right until I add a lot more spice. If you really want it, I'll try to work out how I changed the recipe in the book. [​IMG] Keith

    Thats cruel! I had big plans for 4 slabs back ribs, 2 chuck roasts, and whole hog fatty but wifey says were goin to visit the daughter in Wichita. *!#& !!! And then the snow came and the fog and now I guess we aint going. Maybe. Well the meat is still in the freezer so my plans are out the window also. I guess Ill just watch the race if it dont get rained out and try not to cry in my beer to much.

    By the way, great lookin grub!!

    I too...am interested in a venison smoke...although..I pretty much 'et up' both my bucks...
