Well, my lovely lady wife decided she wanted Q for her birthday supper... And we all know who gets up before dawn when mamma want Q for her birthday eh?

Still...  I wouldn't have seen this had I slept in today:

The foil pan above the water tray is a bit of an experiment...  I've had problems in the past with the country ribs drying out, and my theory is that grease builds up in the water tray and stops evaporation.  So the idea is that the foil tray will capture the drippings and prevent this from happening.  We'll see how it goes.

Wish i could see a pic of the CSR, they look mighty lean on the view i have.

 Don't think the fat is stopping evaporation but catching the fat/ juices in a seperate pan will let you use them again to freeze any leftovers or to flavor beans etc.

  when we have CSR i like to cut them myself so that the fat has not been trimmed off.

 Fat = flavor and moisture.

They're a nice mix of fat and lean eman.  They're going into a pseudo Lexington Style, so if they're a little lean that's OK.

Yeah, we're gonna eat well today...  Made my world famous potato salad last night, and have some nice white corn that will get roasted on my Egg this afternoon.

Almost time to mop again and flip 'em, so some mid smoke Qview coming in just a little while.

Just finished chopping the pork, and I must say - the foil tray made a huge difference in the ribs, they're much moister than my past attempts.
 
Wow what great looking country style ribs wish we could find then around here....
