Hello people. Newbie here and I am looking forward to learning more about grilling and smoking meats. I am by no means a pro but put my Grill Master grill and Lil Smokie smoker to good use. I live right north of Beaumont Texas and work in Africa on rotation. Thanks in advance for the help and info I will receive here.

I have not got to smoke one yet........those long legged suckers can run. We do grill/bubba-q over here but with limited results. All the ex-pats try to bring different seasonings, accessories and such. Plus the cuts of meats leave a little to be desired. But we do get by. The next time we cook I will take some pictures and post.

OK people I am still in Africa working on my 45th day. So much for 28/28 rotation, work visa problems with immigration. But that is another story. The reason I posted is "THIS IS A GREAT PLACE!" As soon as I get back to the real world the smoke is gonna roll in my backyard.....thanks to you people. I do want to add (maybe in the wrong place) a simple appetizer for you to try. No cooking or anything but you do have to trust me.

Get your fresh jalapenos then split down middle. Remove core and seed, then soak in icewater for 3-4 hours. Remove peppers, pat dry then add crunchy peanut butter of your choice as you would any spread or cheese. It does not cost much to try this and some people like and some don't so I hope you enjoy.
