Hey,
Joined up to get good ideas on the smoking process.

Had a Char-Broil offset, did a bunch of work to it and it turned out...sub par.

Got a WSM which is a major step up. Smoked lots of really good meat on it. Last week some pork butt that turned out far superior to anything I have had before, but I'll do better next time. LOL.

I'm in central Kansas, so I get to try smoking in all kinds of weather. Hope this winter makes for good meals. Thinking of trying a turkey for Thanksgiving.

Other things I do for fun...
Aerospace engineering, Yamaha FJR, Tanganyika Cichlid aquarium, Ruger P95, and an 04 Durango. Hopefully someday that list includes a Cessna or Piper, or even a Mooney.

Welcome to the forum - I had a near identical progression as yours - started with a Char-Griller Pro, modded the heck out of it, sold it for $80, and bought a 22.5" WSM. Have never looked back once! WSM has been rock solid and never let me down once.
