Hey folks,

So I got a meat smoker for Christmas and stumbled on this lovely corner of the internet yesterday while testing it out.  I made an awesome smoked chicken and it turned out really well!  Not sure if I'm supposed to put pictures in these Roll Call threads but I'm gonna do it anyway.

First I brined the chicken overnight with water, sea salt, and margarita mix.  (It was my grandfather's idea.  Turned out to be a good one.)
Then I stuffed it with some apple, lemon, and onion.  Rubbed a little olive oil over the bird then threw some seasonings on it.  Salt, California Pepper (from Penzeys) and a little chicken broil spice from the grocery store.  Looking good already!


After that, I let it sit in the smoker for about 4 and 1/2 hours  Here's a pic at the 2 hour mark.


And here's the finished product.  Perfection!


Needless to say, dinner last night was excellent.
