Howdy from Missouri. I'm not entirely new to Smoking but relatively inexperienced. I got an ECB about 20 years ago and ever since then Thanksgiving turkey and Christmas/Easter hams have become my job. I've done a few butts and one salmon slab. Being I work 7 days a week between 3 jobs, I seldom have time to nurse the ECB, therefore I don't smoke often.

 Recently an on-line buddy convinced me I really need a MPS. (man you folks love the acronyms) Pretty much a set it and forget it set up. That will allow me to smoke while at work, home chores ect. Then my boss, who has a butcher business on the side, gave me some sausage that he cold smoked. OMG, it was so good. Investigating the cold smoke process led me here. Now I see sooo many more options of things to cold smoke.

 I'll be lurking more than posting, as I have alot more to learn than teach. If I can't find out thru the search feature I'll be asking.
