Florida Fireball Salami

    I did these before in Georgia, called them Georgia Fireball and used Umai bags. This time i went another way.

    THIS IS A CURE #2 RECIPE WITH BACTOFERM. PLEASE DO NOT ATTEMPT THIS IF YOU ARE NOT SURE YOU CAN MAKE IT SAFE.

    All mixed up ready for balls.

    Well sorta a ball, flat on the bottom.



    Using caul fat to wrap the FFB



    I had to act quick and make another ferment box. Use what ya got while in a MotorHome. My wife had a new plastic box for yarn.......Sorry dear.


    I did drill air holes while making.

    The FFB will get cold smoke.


    Had left over meat so i made some Florida Firestick and used Umai salumi bags.

    I'll be watching this because salami and pepperoni are something I want to do when it gets a bit cooler.

    Umai bags work great. No need for fancy equipment.

    Nepas, I use them but was wondering if a true dry cure man like yourself was happy with the results .
