Yesterday I did a 3.5lb bird for right at 4 hours and 225 or so. Before I started, I rubbed it with a mix of brown sugar, salt, pepper, chili powder, onion powder, and cayenne. This was my first attempt with chicken (second smoke overall), and it turned out very tasty! I also threw in some ABTs about halfway through and they turned out tasty as well!
