First warm weather of the year: Brisket, baby backs, pulled pork, sausage, and a few sardines.

It was great to see a near 80* day in the forecast, so my wife and I decided to host a small get together with co-workers and friends.  I started the 5lb brisket flat and 4lb half picnic at 7am, the ribs went on at 10am and the sausages at 11am.  The sardines were a late arrival, and received about an hour of smoke a quite trip to the smokey joe to finish up. 

    The brisket and pork finished about the same time and were wrapped and left to rest ~30min.  I did a 2-2-1/2 with the ribs and they turned out great.  This was my first brisket, and while the taste and look was acceptable, it was too tough.  I need to work on this.

    I am still learning the ins and outs of this smoker, but I think I am getting the hang of things.  The char-griller burns a lot of fuel, but I guess this is true of most side-box units.
