No fresh birds to be found so I got a 12lb cheap store brand frozen turkey.  Thawed and brined for 12 hours.  Smoked at 250 with apple wood on my reverse flow home built job.  Spritzed with apple cider and Captain Morgans.  Smoked to 170 degrees and let it rest for 30 minutes.

Pic is a bit blurry, but the bird was moist and delicious.  Nice mahogany color too.

Looks like it's all good to me . As long as it's moist and has a good taste , Score 1 for roclimo!!!!

How long did it take? I am trying to decide if I am frying or smoking the bird this year :-/
Nice work on that bird.  Syman, my whole turkeys take anywhere from 4-5.5 hours depending on the size of the bird, weather, cook temp stability.  Remember -- it's done when it's done by meat temp, not time.  And don't forget to let that bird rest a bit before carving!

Thanks for the reply...Very true with the temp not time. I love the fried so much, I can do a 16lbs bird in about an hr. The guests are weirded out when they get here and the raw turkey is in the refrigerator.
