First Turkey Parts

  1. Started with a Hickory Smoke at about 250° for 3 hours with a special injection and rub. Turned out great except the skin its not bight through a little rubbery but the inside is perfect. Any tips or suggestions ?

    WDS, try crisping the skin on a hot grill for a minute or two ?
