Here are some pics of my first attempt at smoking trout...

Here is a pic of them going in



and here is a pic of them done.



These were Rainbow and Brown trout , they were brined for about an hour the seasoned with lemon pepper and garlic powder and smoked at 210 degrees for 2 hours using alder and cherry bisquettes. The larger ones were excellent but the smaller ones a touch overcooked. Still good though

btw.......LOVE the bradley digital.......a TRUE set it and forget it type of smoker.........

in some circumstances, i would love to have one.........like smoking sausages.......better control of heat
 
Thanks Fellas, I removed all the bones and put the fish up last night and had it again for lunch.
It was great.
I may try making a dip or spread with some of the leftovers.

Great lookin' Q you've got there Ron! Now I'm gonna put trout on my list, I had been using salmon so much, I forget the other good stuff.
 
My smoked fish comprise of Redfish, Bluefish, Spanish Mackeral and I have done Speckled trout, although I find that fish is still better fried. Been awhile since I have had the freshwater varity also. They look good.
