First try at pulled pork in my mes 40

    So I did my first attempt at pulled pork in my new MES 40. This was an 8 lb picnic pork. Smoked at 225 wrapped at 165. Cooked to 205 it. Took a total time around 11.5 hours. It stalled at 165 for a while, I wrapped it during this stall, then stalled again at 190 for about 2 hours.
    I fell asleep while it was resting, so I will pull it after I finnish my coffee.
    I has a bit of bitterness to it. I used my AMNPS with Traeger pellets, vent fully open, chip tray removed and chip loader pulled out about 2 inches. Still didn't have enough air flow. The wind wasn't blowing, I have had the wind blowing into the exhaust vent before, pushing the smoke out the chip loader, just turned the smoker around, problem solved. But that wasn't the issue yesterday. The drip pan I used is quite large, as I had 2 racks of bb ribs going as well, but they came out great. But maybe my pan was too big, slowing down the flow.

    Yes. I pulled it this mourning, the bitterness was gone! Maybe the night in the fridge or just when I tasted it last night coming out of the smoker I had just eaten some ribs that were quite sweet, I prefer more savory with a little heat, and hint of sweet, but wifey likes her bbq sweeter. So maybe the sweetnes made my buds more sensitive to the contrast of bitter. Or maybe I was just too tired last night when I tasted it. But anyways it came out great. Here's a pic of my breakfast!
