Just gave my new MES30 a workout with pork ribs and sausage. Gotta admit, I'm very pleased with myself right now. BTW, if you live near a Costco, they have very good quality meat. Always bought there to grill, not I'm smoking it. Any thoughts on how it came out? Feedback and constructive criticism welcome. I went for about four hours at 250, using apple wood. Dry seasoning, no sauce yet.

 
Looks good now we need single bone pics! Did you make your own rub? My favorite wood combo so far is pecan/cherry keep experimenting it's the fun part!
 
I do have a good dry rub but I bought these pre-seasoned. I was planning to come home and throw them on the smoker so I didn't have time to let the rub sit. Meat was falling off the bone.
