Started early morning on Friday, October 5, 2007. Woke up at 7am and got the fire started. The pork butts (also known as pork shoulder), went into the smoker at 8am. Estimated smoking time: 10-12 hrs. Temperature of smoker was kept at a constant 200-250°. Hickory wood was used for smoking. Butt was removed at 195°.

Preparation: Pork butt was coated with mustard and rub (brown sugar, salt, pepper, etc.) was applied the previous day.

Smoking: Every hour until it reaches 140°, I keep adding hickory wood. Butt was sprayed every hour or so with apple juice.

Total time: 12 hours (8am-8pm).

After pulling, finishing sauce was mixed into the pork. (combination of vinegar and brown sugar, credit goes to gooose53). The sauce worked great!

Pork was tented with foil and was in the resting period (20-30 minutes, for the juices to redistribute).

You did a phenominal job on 'em butts! From looking at the pictures I could almost smell them butts smoking! I haven't seen such good looking grub like this in a long time. You have nailed it. Don't change a thing. If it tasted good to you then I wouldn't change anything.

I did a similar butt this weekend. Good job, yours looks great.

I always slice mine the first day, while hot, and serve. But I have to admit, it does fall away. Gives me bragging rights when it is so tender. I warm the leftovers and pull them the next day.

Yours looks as good as any I have done. Kudos to you!!
 
I agree with Gypsy on the part that pulled pork does not photograph looking as moist and delicious as it tastes & looks.

But I do have to add; echow87; If you have as much taste in the bite as you do in the bark, MMMmmmmm......
 
those are some delicious lookin butts. great job. im a little upset tho. i just a big slice of pizza along w/ other JUNK. thought i was full. seen the pics an now im hungry and the pizza just isnt gonna do it think you could e-mail me some of that butt lol
