Finally a Tri Tip started by trimming some of the fat cap and scoring it.Seasoned both sides with Worcestershire,Salt, Fresh Crushed Black Pepper.



Breaking in the new Weber Kettle started a small snake with Pecan and Pistachio  



Smoking at 230* as close as I could tell thru the lid


Caramelized some Onion and Sauteed some Enoki Mushrooms


Did a reverse sear when it reached 125* IT finished at 129* IT


Carry over it came up to 133*


Rested 20 minutes the Wife and Grandson were starving


I saved that juice to make gravy for the next day ( Thursday)

Wed. Dinner served


Disappointed with my self steak was great tender and moist,I failed to see I was not cutting across the grain.

Left overs were cut properly


Much more tender this way

That looks great Richie!! You will be hooked now.  Tri Tips used to be hard to find around here but cheap.  Unfortunately the trend has reversed and I can get them but at 7+ per pound.  I hope the prices go back down..  Your picture is a great example of what a juicy piece of meat it is!

Richie, How do you like Royal Oak's ridge charcoal?
That was the first time and I think it burns pretty slow,with good heat I know when I did the sear it was cooking hot.

Looks great! Seeing all that juice really makes me want another one, but I have to have one cut and it's costly here. Maybe I'll splurge.
I cut mine wrong the first time too and wouldn't have known if I hadn't posted a pic, it was so tender & juicy.

Dan I new when I picked the piece up with the knife,still tender cut across was like butter melting in my mouth.Thanks for the point I appreciate it

OMG! That looks so YUMMY! I have a small grocery store in the next town that has Tri's sometimes, will have to pick one up! Hope I can have as good luck with my ECB! (Still dreaming of getting a better smoker soon!)

I have plenty of Pecans around here! (HMU if somebody wants some Pecans!)

Diva and Tink want the juice of that for a drizzle on their food!

These are the looks I get when I pull something off the grill/smoker....."Where's our MOM!"

Since you're in Jersey, and Tri Tips aren't a common thing in Eastern stores, can you tell me where (what store?) you got yours & price per pound?
