I threw my first Tri-Tip in the MES 30 smoker. Salt, pepper and a little onion powder. Filled the A-Maze-N-Smoker with two rows of Cherry and Hickory mixed. Power went out after an hour and a half. No worries, fire up the generator! Hit 140 after two hours at 225. Perfect beef! Sliced thin for sandwiches. Served with Au Ju and sides. Tri-Tip is easy and tasty.

Hope everyone is enjoying the smoke this long weekend. Next up....a rack of ribs.

Looks great.  Last time I took the advice of a fellow member, pulled it a couple degrees early, and threw it on a hot grill for a few minutes to char the outside a bit.  Really loved the way it came out.  If you have a gas grill, definitely worth a try.

Thanks for all the complements and advice. I think I would finish on my grill right at the end next time. I did a 2.5-2.5-1 on ribs today with a 5 min finish on my charcoal weber. The grill finish made a difference. They were great. Sorry no Qview. Looked so good I forgot.

Happy smoking!
