Well I just finished smoking my very first time! I smoked a rack of baby back ribs at about 300 degrees for almost 3 hours I checked the temp of the meat and it was over 170 degrees( the thermometer only goes to 170). I tasted the meat and it's tender and taste great. However the meat has a pinkish look all the way through. I believe the meat is cooked done but I thought I would ask the experts. It taste good and the meat is very tender. What say you?
 
Baby backs I like cooking till 180-185 is your temperature gauge accurate?
You don't mention what kind of smoker you are using. A lot of times the pinkish coloring can be from the smoke.
