My name is Don.

I live at Lithgow, New South Wales, Australia. Lithgow is about 100 miles west of Sydney, our capital city.

I am retired from farming and the paid workforce, and now live in town.

Some time after my parents had died, it struck me that I knew very little to nothing about my grandparents. For the past year or so, I have been looking up my family tree. The thing that stood out the most was, large families, 6 to 8 children. and the ones that survived to their late teens, went on to live well into their 80's and 90's with no modern medicine.

I stumbled across something about making your own bacon,on the internet and about the same time saw for the first "pork belly" for sale in my local supermarket, and my niece and her husband have turned the family property into an accredited organic pig farm.

I have looked at everything that I can find on the internet, that relates to smokers, smoking, brining, dry curing. Without the use of added poisons, be they only in small amounts,(I would prefer not to use them if I can get away with it) and the list goes on.

I am thinking that I will get a "Hark electric smoker" as it seems to cover all bases.

I have purchased the "Rub_n_sauce_1" and and I like what I see. As you may or maynot know, here in Australia we have gone metric!  Our Gallon has become 4.55Litres, our Cup measure is 250ml or 1/4 of a Litre. and our old pound is now 4.54Kg. Has anybody converted above to Metric?

This is a great place to come to begin smoking. I just started last year and I have learned a lot from the posts in this forum and have got so much help from the members. I hope you like it as much as I have.

Welcome aboard!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Just ask when you need anything, and someone here will surely have the answer.
