I have been wanting to break the smoker out since I put it away for Winter here in Tennessee. 3 Days ago it was 80 outside then the next day around 40... Finally today it's going to be mid 60's and I decided to smoke some wings along with 2 Butts and a chicken.

I've seen some good looking Q's and many different ways to prepare them. I'm going with a EVOO with fresh cracked pepper and salt then probably finish them in Franks / butter then toss them on the firebox side for a nice char. I only hope they come out as good as some of the ones I've seen on here!

I really want to replace my temperature gauge as it's the cheap one that says Warm Ideal. Why why would do that is beyond me.

Anyways here is the start of things.
