This is my first time trying the 3-2-1 method and also trying a new way of controlling my temp. In the best I have done my ribs unfoiled but after reading several posts on this site I am excited to try something new. I used famous Dave rub before putting on the smoker. For the temp control I have usually monitored my heat very closely and added a handful of coals or so every 30-40 mins but I wanted to go longer times between tending the firebox. The first couple hours were around 250* and then I tried loading the box up with more coals using the minion method. However, now that I have the ribs wrapped the temp is now having around 280-290*. Is this going to mess up the ribs? Here is a pic of the ribs pre-smoke.
