First time trying 3-2-1 with Spare ribs

    This is my first time trying the 3-2-1 method and also trying a new way of controlling my temp. In the best I have done my ribs unfoiled but after reading several posts on this site I am excited to try something new. I used famous Dave rub before putting on the smoker. For the temp control I have usually monitored my heat very closely and added a handful of coals or so every 30-40 mins but I wanted to go longer times between tending the firebox. The first couple hours were around 250* and then I tried loading the box up with more coals using the minion method. However, now that I have the ribs wrapped the temp is now having around 280-290*. Is this going to mess up the ribs? Here is a pic of the ribs pre-smoke.

    What type of cooker are you using? Did you place any liquid in the foil?

    I am using Ok Joe Longhorn and I put about a quarter cup apple juice in the foil. Here is a pic after I foiled them for about an hour and a half. I think I'm on the right track too because the smallest bone fell out when I was putting them back on smoker

    look good. Test with a tooth pick and see if they are soft to the poke. They shall be good with some sauce now and toned down heat. I wouldn't have the smoker uo to 300 now if you can cut it down.

    I was able to back down the temp to 265*. They have been back on unfoiled for half hour. Going to do toothpick check and see if they are done

    Well they turned out a little drier than I wanted but I attribute that to the higher temps. Still darn good runs and I'm pleased with the first attemp at the 3-2-1

    No it should not cause you a problem. Ribs are quite forgiving.

    Wade, I tried Johnny Trigg's recipe minus the tiger sauce because I couldn't find it around where I live. They were good but maybe too sweet for me. I'm used to nothing but a little run on my ribs and I really like being able to taste the pork. These ones had too much other flavor for my liking. Still tasty though!
