Couldn't wait for all the "proper" tools to get here, so I decided to make a small batch as a test run. Ordered a seasoning kit from "Ask the Meat Man"...enough for 25 lbs. I divided it out and mixed it up with 3 lbs of venison burger and 2 lbs 80% ground beef. Stuffed it into 2 1/2" casings yesterday, and started cooking it in my oven this morning. (yeah, I know....a smoker would be better.....that is still in the works....[IMG])

Internal temp is currently at 149*.......I CAN'T WAIT!!!.......[IMG]

Will post pics later after its water bath and resting period.

OK.....I know patience is a virtue and all that, but I just had to sample these!
Tasted them right after I pulled them from the ice water [email protected] about 110*. Still a little on the soggy side, but the flavor is perfect! Now I'll have to start playin' with cheese and various spices.....[IMG]

Summer Sausage is tricky. Looks like you did an excellent job. Glad to see you gave it a bath in cold water. Many peple forget or don't know about this. You are getting some good info.
