Hey all. So yesterday I attempted to smoke my first spare rib rack. I chose the 3-2-1 method. In years past no matter what I tried the meat always came out very tough. 3-2-1 nailed it. 3 hours naked with rub, 2 hours wrapped in foil, 1 hour naked with sauce. Oh my freakin god they were tender. Zero effort to pull out the bones. Absolutely amazing. Now I gotta work on a better sauce. But my god did I get what I wanted.
