I'm new to smoking and will be smoking a 6# pork loin in a 30 MES smoker. Here is what I've read so far and please correct me if I'm wrong, use a rub and wrap pork loin put  in fridge overnight. Next day bring smoker to 240 degrees, put pork loin on second rack and leave until internal temp reaches 140 degrees, approx. 2 to 3 hrs. Wrap and put into cooler for 1 hour. Is this correct or did I miss something. Thank you in advance for your help.  Roger

The Rest time is your choice. With Beef/Pork cooked to 120 to 150°F, a 20-30 minute rest on the counter is all that is needed. In this case, wrapping in foil and going in a cooler will cook it more, IT will rise 10-15°, and is only beneficial if your meat is ready and the rest of the dinner is not...JJ
