First time smoking wings

I smoked wings for the first time today on my smokey mountain at 250 degrees for 2 hours flipping once halfway thru. With 3 pieces of apple wood to start then hour in one or two more chunks. It turned out flavorful but very rubbery??? Any tips or pointers
 
Ya but that will cook it much much faster...I like low and slow I thought maybe spraying it every so often, a lot of smoking books say to fry them off for final product for crispiness
 
Some things are just not S&L , Wings being one of them . Drag your Smoker out and try to wear it out (I mean , practice -practice - practice). You'll . develop a method you really enjoy.

Depends on how much smoke flavor you want for your wings.

High heat=less smoking time

I like to go low (170) for a couple of hours to get them well smoked and then crank up the heat to 325 -350 for the last 30-45 minutes or so to crisp the skin.
 
My grilled wings always turn out very good. I cook them on the grill the same temp and time i do in the oven; 350 for two hours. If i cook them alongside ribs at 225-250, I'll let them cook for 3 hours. The skin always turns out nice and crispy.
