I finally bit the bullet and smoked a whole chicken. I didn't spatchcock(baby steps) did beer can chicken with beer and Apple juice and some of the rub. It was hands down the best chicken we have ever had! I am sooo bummed, I took a picture but didn't realize I would have to upload it right away. But it looked good! Wasn't a fan of the two new sauces I made, but you could have put anything on this chicken and it would have been amazing. Thank you all for all your help! I have a pork shoulder in the smoker now, fingers crossed I don't blow it like last week!

It sounds like you are mastering your chicken!  I like whole smoked chicken as well and I do mine sitting up like beer can style because I have a holder.  I like spatcocked chicken as well but usually grilled because I'm too lazy to cut up a whole chicken when smoking one :D

As a mater of fact I just bought a roasting rack that has two sections that fold up so you can do two vertical chickens at the same time!  This rack fits in a foil pan and the verticle sections can can be layed back down to where you can rest a whole cut of meat on the rack as well or you can play with them to add ribs and other such stuff.  It's one cool little rack :)

Ha lol, I am a sauce FANATIC.  I dip everything!  My husband tells me that all the time too, "This doesn't even need sauce!"  I beg to differ...maybe one day my taste buds will grow up ;)

I definitely need to get one of those!  I didn't even have a holder for the chicken, made pulling it out a teeny bit tricky!

Electrics aren't frowned upon here, but not posting pics of your smokes is!

I love sauces as well but I'm fairly selective when I use them.  I recently posted a sauce recipe for an amazing sauce that is not commonly seen here in the US and it is primarily for grilled chicken!  You can check it out my detailed recipe and post here:

What I got was the Cuisipro Stainless Steel Dual Roasting Rack from Amazon for $23.  Not cheap but I will use the crap out of it in my smoker for all kinds of meat cuts and poultry AND I believe it fits in the large foil pans I get from Costco!
