I had the day off today and decided to put some thighs in the smoker. I put them in a brine (1 gal water, 1/8 cup salt, 2/3 cup brown sugar) for about 4 hours prior. Took them out of the brine, pat dried them, rubbed some EVOO on them, then put a light amount of natures seasoning and cayenne on top. I turned the smoker up to about 250 deg and fired up the AMNPS with some apple wood pellets. Did a roughly two hour smoke then finished with a little BBQ sauce (the kids love it) on the grill. They came out of the smoker fairly crisped up which surprised me, and the finish product was awesome! I made some twice baked potatoes and cooked down some string beans in the cast iron pan. I'm officially hooked on using the smoker. My wife was impressed and my kiddos devoured them. Looking forward to smoking something on my next days off!
