Hey everyone I'm new to the smoking world getting ready to smoke some.ribs this weekend. Using a 18" weber smokey mountain with hickory chips. Any first time advice for a beginner would be greatly appreciated

Welcome to the forum!  I would suggest chunks and not chips with the WSM.  I smoke mine between 225 and 250 for 5 hours without wrapping.  I use Jeff's rub.  There are tons of successful rib smokes available on the site.  Try the search magnifier at the top right.  You are warned, this will lead to a lot of reading!  Glad you joined us.

Welcome to SMF!

tip of the day: don't put on sauce (if you are going to) until the very end and make sure your temps are running lower so you don't burn it.

just sauce about 30-45 minutes before they are done or about 4 hours into the process and then brush a fine layer sauce on and let them go to set the sauce up.( temp of the smoker below 230 degrees)

Search at the top for some sauce recipes or buy Jeff's sauce recipe to support the site.

Make sure to take some pics with yoru camera or phone and post them on here so we can see how they all came out. the more pics the better!

Happy Smoking,

phatbac (Aaron)
