First time smoke.

Hey Guys, this is the first time I am using my MES40. It is also the first time to smoke sausage. I will be using the racks because I haven't gotten rods to hang the links from. Any reason not to do it this way. Also do I need to put water in the pan? I will be using a AMPS fo smoke. Thanks a lot.

I dont have a mes but you can smokem lying on the racks...... not a problem....

When you do get rods for hanging, you can get 1/2 squaire dowl from the big box hardware joints for pretty cheap.  They can just sit right on the rack holder and won't roll.   Or they will fit between the two wire rack holdrs for a pretty sug fit if you are worried about them moving.   Works well.  If you get a bow in them just turn them 180deg to straigten them out next time.
