Own two charcoal smokers - so I had to by an electric one lol. Bought a Bradley 6-rack digital for $200 and decided to break it in by doing a brisket. Figured I go feet first with the most difficult (for me at least) on the first day. Have to say...the 2.5 hours to pick it up was well worth driving Love it. Bought some hickory pucks at Bass Pro on the way home. Got home, placed the un-trimmed 13 lb brisket (folded at bit to fit), and set to 220. 18 hours (plus 1 hour resting) and 192 degrees later, we had the most tender brisket I've made. Tender and great-tasting. Could have used more smoke, but I have to trial-and-error that. Used to the charcoal weight of the smoke, but regardless...was VERY happy. But more importantly, my wife and three sons loved it. I also smoked potatoes and served with my homemade BBQ sauce. This was great. So happy on this purchase. Followup up with three racks of baby back ribs and my Sweet Mediterranean Rub. Equally pleased. Wanted to let you guys know and pass on a couple of pics.
