Hello everyone, and thank you in advance for all the great advice.I have been smoking for years using homemade rigs built out of old fridges and coolers, wanted to get something more convenient for smaller smokes so I just picked up a MES 30 yesterday and looking for any tips, tricks, etc.

I seasoned it yesterday as the manual described. And figured I would do it again this AM just to be safe before I throw a turkey in her today.

I put my maverick in to check the temp and am noticing much higher temps than the digital display, is this normal? My Mav is at 330 and the mes is at 275.

Also wanted to say it was -20 this morning here in Wisconsin and had no problem getting the temp up.

My MES runs about 30 degrees off as well.
