If i would have had the bark i get when i don't foil and the taste i got with the ones i did foil i would have hit a home run guess thats why i love this so much every smoke is different.

thanks for looking and thank you for all the help. I love smoking food love to learn and love to try new things.

They look really good baby backs will get done quicker-I think the fomula for them is 2-2-1 rather than 3-2-1 which is for spares. Still very delicious looking.

At least they weren' tough!

What I would do is foil your wifes ribs if she likes them like that and not foil your ribs if you like them like that. The Best of Both Worlds

thats what I've been doing too ..baby backs 2-2-1 and spares 3=2=1 and it's been working for me

Same here... baby backs 2.2.1 and spareribs 3.2.1... that one hour makes a big difference.

but those sure do look good!!

Thanks guys i will try that 2 2 1 i don't want to give up on it. is that at 230F and if i do the 2 2 1 will i get a better bark? thanks for the help love it here.

You are not going to get the same bark w/ foil that you get w/ no foil. The foiling process braises or steams the ribs . this is what makes them so tender.

the braising process is not condusive to forming a heavy bark.  2 hrs in foil for baby backs is a long time ,I only foil for 30 min to an hour depending on how they feel after the 2 hour smoke.

Ty,

If you are foiling and you want better bark get a dog, just kidding. If you want the bark, Low and Slow between200* and 225* (No Foil). With foil you are just steaming, braising the ribs within its own juices.
