OK guys i did ribs for the first time in foil today the taste was good but they were falling off the bone(that was the fail part) and i didn't get the nice bark i get when i don't foil. Here is some Qview . I do have to say i love eating my mess ups.. some BBs found at wal mart 1.00 cheaper than few weeks ago so got 4 racks getting the rub together for the rub down. Ok did one with reg. mustard and did one with hot as hell mustard. there was no real difference when done. all rubbed up and ready to go. getting the smoker up to temp. ok we were stable at 230 degrees so the ribs went on for 3 hours before foil. 3 hours in and the foil went on.. time for foil foiled for 2 hours now here is were it went wrong lol when i went to take them out of the foil for there last hour they were falling off the bone? so i took them off and let them rest. now the taste was great but i don't like them falling off the bone and i didn't get that nice tight bark. what you guys think did i foil to long my heat didn't get over 235 any ideas were i went wrong? The wife loved them so that was a plus for me lol If i would have had the bark i get when i don't foil and the taste i got with the ones i did foil i would have hit a home run guess thats why i love this so much every smoke is different. thanks for looking and thank you for all the help.
