First time Beef Short Ribs

  1. Hi everyone.  I picked up 16 pounds of beef short ribs yesterday. Im going to smoke them tomorrow.  Never done the beef short ribs before.  They are 4 slabs about 1-1.5" thick and they are about 7-8" long.  I think im going to cook them as a whole slab instead of cutting them into individual ribs.  Any thoughts on that?

    I have been reading alot  of threads on how to smoke them and it seems like most use the 3-2-1.  For those who just smoke them straight through 6-7 hrs without wrapping, do they dry up at all and are they tender still?  For those who wrap them do they start to fall apart like a pot roast can?  looking for any advice or info you can offer.

  2. I have done them both wrapped and naked. I prefer the naked so they get more time in the smoke. If you foil the come out of the foil about to fall apart. Then the last hour is to firm them back up. Adjust the cooking time to where you like them.
