First time Beef Back Ribs

    Hi Guys. I have been lurking on here for a while. Quick question. I am going to cook some Beef back ribs in my WSM this weekend. I am going to cook using 3-2-1 method and going to use the rub below with some worchesterchire sauce on the ribs the night before. Plan on spritzing every half hour with applejuice/Captain Morgans/a little bit of the rub below. Now I'm wondering if I should put a BBQ sauce on for the last hour or half hour, and what sauce would you recommend for that? Any receipes or advice would be great. Tips and hints on making the best beef ribs also encouraged!!! Thanks.

    I put bbq sauce on the last 30 myself and spritz every hour

    I think you will find the 3-2-1 too long for beef ribs.  I usually only do 2-1.5-1.75-.5

    Spritz every 45 minutes or so for me.

    Hmmm ok I have been reading some just stick with a 3-2-1 and some go shorter. What about BBQ sauce for beef....what's best? I like sweet for pork but what's good or beef?

    I agree. Figure how you like your steak. 3-2-1 will be in the Medium to Well area. I tend to shoot for 4 1/2 hours top on mine, more a 2-1.5-1 or so. It really is up to your taste.

     Jeffs Sauce goes good with Beef Ribs. Mrs. Davies is another, if you can find it.

    Also if you like to try a good marinade for Beef, pick up some Mojo Crillio (not Goya brand). Excellent on beef.

    I'll try the mojo on the next ones. I'll look for Jeffs Sauce or Mrs. Davies. You guys have any more sauce ideas??... thanks for all the cooking tips. I'll shorten up my 3-2-1

    I RARELY use bbq sauce.  But if I do its Sweet Baby Rays and I only put it on the side.  My last beef ribs I thinned down some bbq sauce to spritz with  (mysons girlfriend gave his dad for Xmas,Budweiser BBQ sauce[​IMG]).  I did not like the taste at all.

    Jeff's sauce work's good on Beef ribs. I put the sauce on 3 times during the last hour to get the sticky finger goodness.  The 3 - 2 - 1 is a base line on ribs.  It works pretty well for me, however I find that if I am doing full racks that it's closer to 3 - 2.5 - 1 for the desired results.  If you are doing individual our pairs, the time will be shorter.

    Many years ago while on a hunting/camping trip we kiled a deer in the morning.  When we dressed it we noticed how nice the ribs looked.  We had a 55 gal drum we had cut and converted f orour grill so we put the ribs on and slow cooked them all day long anticipating a great meal that evening.

    When you bit into the ribs it was more likely your teeth would give way before the meat.  There was zero fat on the ribs and they were as tough as anything I've ever seen.

    I hope your beef ribs turn out great.  Based on personal experience I'd recommend you don't every try deer ribs.

    These turned out really good. I did two racks. One with just rub and one with some baby rays. Both were delicious. Ended up doing a 2.5-1.5-1. Thanks guys
