sprfast is right, the ribs you had were back ribs, they were removed from the rib roast section. high dollar cut so they wont leave much on them back ribs. they are tasty though. if its more meat on a rib then go to the short or spare ribs but it will not be of the quality on the back ribs. if i can find the back ribs cheap i will do them if possible. real fine looking smoke there. makin me need to do some a them again!!! great job!!!
 
If you can get a butcher to bone a ribeye loin out they will have much more meat on them. The ones you used were mechanically deboned from the pic.

Nice job though, they look great.
