Ha! I've told many people, when smoking chubs, be prepared for the long haul sometimes!

If this is the same SS you were talking about being to wet, I can't see it from the pics. I'd let it rest in the frig for a few days and try it again, it may just need to dry a bit. Looks great from here.

Yeah this is it, definitely will be a weekend smoke next time. I think it is what you were saying it's the fat content not the moisture. I'll let it rest. Don't get me wrong it won't go to waste with the addition of smoked cheddar, smoked mozzarella, crackers & beer it will be well received.

Take notes on what you do. Next time try a leaner meat mix and see how it goes.
 
Yes I was thinking next time using lean beef, grinding myself & adding pork so it is a little more in my control. Thanks again for the advice.

I gotta say after resting a couple of days it is right where I would like it to be. Took some into work & people were loving it. Not to mention the wife loving it. Thx for the assistance. CB

Nice looking SS. I remember when I did my first ones how I couldn't believe how long it took to get up to temp as well.

 Yes sir great looking stuff plans sound good too some beer, cheese and crackers man and I just finished dinner and I got the munchies already dang it man.
