First Summer Sausage

I have been locking for a good summer sausage recipe for a while now.

some seem to be to bland. What I am looking for is somthing like Hickory farms,

This sounds like it might have that " something extra or tang " we are looking for.

how would you compare it to one of the better ss out there?

although home made will always beat store bought.
Well, I have never tried Hickory Farms but this is way better than what I buy at the Deli counter in the supermarket. It has more sour undertones and the 8 hours in smoke gives it a good smoke taste. The problem is so much depends on your tastes. I kicked the garlic up because I like that. I suggest you try a recipe that looks close and adjust it to your tastes.

You make a lot of friends when you make good summer sausage. Those slices look like you smoked them perfectly. You could try grinding the fat coarse and separate from the rest and then mix it all together. It might be close to what you are looking for.

Party in the Great NorthWest! Bring your own snow shoes.
Har, come on over! The yard has bare spots now but there are still areas with 8 or 9 inches of snow so the snowshoes are optional. However, I am not into good food, wine or beer so you might want to pack a lunch.

Nicely done Disco.....SS with some kick is on my list for me but need a mild one for my honey as well. I use the KA grinder as well and the coarse plate is my choice. I wish they had a few other choices for KA plates but it is what it is.....Willie

Thanks, Willie. I have an idea. I'll suggest to your honey that a new dedicated grinder would be a great gift for you and you drop the hint with my missus.
