The wife asked me this weekend if we could smoke a chicken for Sunday's dinner and I asked her if that was a serious question because you're dang right we can.

This was my first Spatchcock chicken and it was amazing thanks to this site!

Brined for 24hrs
Air dry in fridge for 20hrs
Little EVOO, SPOG and Cajun. Smoked at 300ish for 2hrs. Breast finished at 168 and thighs at 178. It was very moist, tender and tasty!. Did not go crazy on the sides as It was a meal my 10month old ate as well.

 
Looks like a tasty bird to me! Just look at that color!

We had a chicken Sunday too. We had a craving for that classic Cornell recipe. Spatching for that works pretty good instead of the traditional halves.

Spatchcocking is the only way I will smoke poultry now.

I think you will feel the same.

All the talk about rib, brisket and butt everywhere (I like em as much as the next guy). Spatched chicken has to be one of the most under rated smoking recipes out there. It's easy, it doesnt take all day and it damn good.
