First Spare Ribs

I started the thread about rather to trim Spares or not. From all the input that I got, I decided to trim them into St. Louis Style. I have the two racks of trimmed ribs, the trimmings and a potato dish that simply cannot be described on the GOSM.

I will post more pics as the day goes on. They already smell great!

Foil the trimmings?? Mine never make it that far unless theres a lot of them.
Those are the Cooks treats while smoking..

Just foiled the ribs. It has been looking like rain all day. I have been too superstitious to say anything, but it can rain if wants to now. My ribs are foiled and could be finished in the oven if need be. Hopefully be showing you some pics of the finished product SOON!

Well, here it is. The ribs turned out great. Ate them with some of Jeff's sauce and they were finger-licking good. Also made some fresh yeast rolls with garlic butter that didn't make the picture.
The Spare ribs turned out great but I believe my personal preference is baby backs. The folks are coming over next weekend. I think I will smoke a couple racks of Baby Backs and a couple Beer Can Chickens. Already looking forward to the next smoking!

Nice job as it all looks real good and you are making me super hungry. I'm actually going to be doing spareribs for the first time tomorrow as well. Did you use the 2-2-1 method? Also how long did you end up doing the trimmings?
 
Good job ! Everything looks great. I know what ya mean about looking forward to the next smoke. It's addicting !
 
Good work, though smokin' isn't work specially if you are having a brew.
