First spare ribs + pork loin today

  1. So ive made baby backs multiple times, always with excellent results, i ve made butts with excellent results.
    I have never made spare ribs or a pork loin before,
    i rubbed both pieces last night and they went onto the brinkman electric at 12:15 today.
    i just tried to upload a pic and didnt have any success i cant get the file size right so i think i'll just put a link to it in a few minutes,
    anyway is there anything should know? im using the 3-2-1 method for the ribs. the loin ive got my temp probe in and i assume i just need to wait until i hit the 160 degre mark then toss it in a cooler for 30-45 min? im also making the "mahogany" sauce i saw mentioned elsewhere. Do i have all my bases covered or am i forgetting something?

    Any help is appreciated, BTW this place is a great friendly place, i love it. [​IMG]

    just remember the 3-2-1 isa basic guidline- watch for the pullback to guide you to step 2. and don't forget the Qview- we love pics.

    Thermom in the loin of course... sounds like yer doin' well. just foiled my spares and countrys here. I just may be done with the babys..$5 an Lb. spares were $2.45. And Thin Blue done lo an' slow puts
    'em on durn near equal footing IMHO.

    St. Looied my ribs, laid out the skirts and put all the trimmings and short ends on top, seasoned and string wrapped... looks good so far at 140 I.T....will post a Q-view on this "Porkball"

  8. thanks guys, i just wrapped the ribs in foil with some apple cider, and i added 2 sweet potatoes to the smoker, Any idea ho long .96lb sweet potato oughta take im guessing 2-2.5hrs. Sound right?

This was my first time ever smoking/making yams, they turned out extremely good, lots of flavor, no need for salt/pepper butter, sour cream. i was extremely ful and satisfied, Also i made the Mahogany sauce recipe, but i replaced the grape jam with cherry preserves it was amazing you should try it.
