This is my first true smoke for 2015...two racks of spare ribs. I trimmed them to St. Louis style but gave the tips equal love. My brother and sis-in-law treated me to a very much appreciated "rub of the month subscription" for my b-day this winter..love them dearly for their understanding of what Makes this man tick!!! So after tasting three months worth of rubs I, with some taste testing from the wife decided on Chipotle Pepper Rub. I stayed true to the 3-2-1 @ 225 on the WSM. KBB with a mix of Cherry and Apple to try to balance the Chipotle rub. I used apple juice for the foiling stage of the smoke. Sweet Baby Rays for the sauce and a 20min rest before I cut them....very nice hint of heat with a sweet follow through.
All in all...tender with a slight tug. I think they came out well while we opened the pool today...man I love summer!!!!!
 
Thanks CF...had to throw the pool pic in after looking at it covered in snow and ice for the last several months. The smoke kept us motivated to complete the opening/cleaning....few growlers didn't hurt either!

Chad- I see your egg and the WSM  doing their job's in the background, was that your poor mans burnt ends? This was our only full weekend we are not spending in a basketball tourney somewhere so we took advantage of the weather and opened early.

I think it was the two pork butts I was smoking to evaluate the differences.

I hear ya on the find the time game when it comes to kids and sporting activities...I think this weekend might be the right time to open mine up.
