First smoked turkey.

    Hopefully the pic worked. Cajun injector gas smoker. I had apple juice in the water pan. I couldn't get the smoker up to 325 so 240-250 most of the time but done in 4 hours. Yeah spatchcock didn't look like everyone else's but it was close. Injected half with Apple juice. Other half with butter. It was tender and juicy. Took it out around 165. One therm said 169 (digital from Walmart) other one said 163 ish. It only tasted smoky at the edges. Should it taste smokier?

    Oh and it was 20 degrees here in north tx when I started at 7:30 am
